Celery,
mushrooms, parsnips, tomatoes, turnips, are all fair game as well as most fresh herbs
like parsley, thyme sprigs, or
even rosemary (although that one will be strong so don't use very much).
Like you Dara I grew up with the red and white can but making cream of
mushroom soup is SO easy and the results so amazing that I don't
even buy cans anymore!
If you
like roasted
mushrooms, might make it
