I was hoping to use whole wheat or
even oat flour.
I think desiccated coconut or
even oat flour would work really well as a substitute (I often use more desiccated coconut when I run out of coconut flour).
No wheat flour, no funny grain flours, not
even oat flour.

oat flour should work just fine, or you could
even just try leaving it out altogether and maybe use a little less almond milk.

I did accidentally make these with
oat bran (mistaking it for groat
flour) but other then that they're still edible and unfortunately taste far to good to
even consider discarding.

even remember the last time I made a «real» one — most of mine have been either flourless or made with
oat flour!
You can also buy
oat flour which is
even better because it is finer.
Oat flour is not gluten free and
even if you buy the gluten free version from cross contamination it still has in its natural composition molecules that are very alike with gluten a can make a lot of problems to celiac and gluten sensitive people.
Instead of using the food processor, I would just be sure to chop the onions and mushrooms very small to begin with, maybe
even mash the beans on their own, and give the oats the slightest pulse or two in your blender (you don't want
oat flour); then use your hands or a bean masher to process it until it's like meatloaf consistency.

Oat Flour or if you aren't that concerned about small amounts of gluten (or if you aren't
even gluten free at all!)
