I don't think I've ever posted, but now I want to say that,
even with some dietary modifications —
turkey bacon, whole wheat pasta — this is simply one of the best things I've ever eaten.
To make it
even better you can decrease the fat and the sodium by substituting the pancetta for
turkey bacon.
Even before I embarked on this mini journey, my breakfasts were usually meat free aside from the occasional
turkey bacon or chicken sausage with my eggs or pancakes.
You will most commonly see smoked meats like ham hocks, neck bones,
turkey legs and wings and sometimes
even bacon.
And if you don't have prosciutto on hand, you can leave it out, or add some ham or
even a bit of
turkey bacon.
Vegetarian protein additions can be seitan or wheat meat, tofu which has been frozen and baked or grilled in small dice or very thin slices, in addition to chicken,
turkey, beef, ham, or
even bacon.
Either keep it dairy (with the cheese) and skip the meat and use butter or coconut oil instead of the
bacon fat; or you could make it meat and eliminate the cheese but add a larger amount of
turkey bacon and use either beef drippings, schmaltz, or coconut oil; or you could make the recipe pareve by skipping both the cheese and the meat and using just coconut or olive oil and some chopped, cooked veggies like cauliflower or broccoli, or
even some salmon if you like.
Take it
even further by adding ground
turkey, beef or maple
bacon.
I'm not a big fan of
bacon (I actually can't
even stand the smell of it) but this picture is beautiful and I may try it with a
turkey alternative!

I substituted yellow and green zucchini for noodles, added some
turkey bacon to the ground buffalo to add
even more flavor to the melange of fresh herbs, onions and garlic and mixed some pesto into my marinara sauce.
