local farmers / economy, and supports / encourages
farming in a more sustainable fashion that, just so happens, has some environmental benefit,
even if it is not as great as not buying / eating beef from CAFOs.
Cooking vegetarian recipes
at home is like getting a whole new education in produce, in
farming, in flavor combinations, and
even in knowing a city better through the location and the layout of
local stores, and who carries what.
We made a point of celebrating
local food on the menus, and in the programs, and many guests commented on how nice it was to hear the story behind their food — quite a few left with packets of the
farm's cheese too

evening.
