One recent study that caught our eye compared daily intake of
EVOO over a period of 6 weeks to daily intake of flaxseed oil.
In most studies, these benefits become statistically significant with as little as one tablespoon of
EVOO per day.
I am completely into savory toppings, current favorite is pistachios, a
good EVOO drizzle, sprinkle of fat salt and or grated parm / romano.
The anti-inflammatory benefits of
EVOO also appear to increase with daily intake above this level.
I subbed with what I had: 3/4 cup
regular Evoo + 1/4 cup lemon olive oil; regular white flour; some almonds I ground out of the freezer (so there were some big chunks left in the grinder), 1 / 4 cup flax seeds, chopped truffles, almond milk, and dried rosemary.

For the enchilada sauce — toast two dried chiles (I used New Mexico chiles) in a skillet and then Vitamix it with a can of fire roasted diced tomatoes — in the same skillet, saute a diced onion & some garlic in
EVOO until well softened, then toss into the Vitamix with the tomato mixture.

In addition to the studies above, scientists have shown that individuals who regularly
consume EVOO have reduced activity of their pro-inflammatory cyclo - oxygenase 1 (COX - 1) and cyclo - oxygenase 2 (COX - 2) enzymes, as well as reduced levels of related molecules including thromboxane B2 and leukotriene B4.
To make the salad dressing, place all ingredients
except EVOO into a blender or food processor.
Squash: 4 cups pattypan (flying saucer) squash, halved lengthwise 3 cups baby zucchini, trimmed 2
teaspoons EVOO 1/4 teaspoon salt 1/4 teaspoon pepper
What I really would like to know is it OK to use
EVOO instead of the coconut oil.
