an exciting salad with you that is incredibly refreshing and of course, nourishing — Mango Quinoa Salad with Shrimp.

Not eating meat means vegetables have to get more
exciting, so I've been experimenting
with new
salad combinations and this was one of my favourites by far.
I know it is a bit early to talk about grilling dishes, but who isn't
excited to eat
salad with grill meat outside in the company of our best friends??! I am, and I can't wait to be able to invite my friends over and have a summer BBQ on my patio!

with a Hit of Lime, Dal
with Coconut Milk alongside a Fresh Bean Sprout
Salad, Tamarind - Mint Tea, and Nepali Polenta
with Himalayan Grilled Tomato Sauce.
I was
excited and purchased plenty,
with plans for
salad and baking and all kinds of wonderful things, but then ended up eating most of them by the handful.
Just like you wouldn't want a sandwich that's only bread or noodles
with a boring sauce, you most definitely aren't going to run home to your refrigerator to whip up a
salad unless it's balanced, delish, and
exciting.
I feel so blah about
salads in general that I need to go kind of crazy
with the toppings to get
excited about them:).
Taco
salads need to be
exciting, packed
with lots of flavour and texture, and this one definitely fits the bill.
I don't do anything very
exciting with radishes most of the time — scrub, slice and toss on a
salad, or add to Kimchi or Napa Cabbage Slaw.
With summer right around the corner, we've been
excited to break out our summer foods, and chicken
salad is right on top of the list.
I think the challenge
with keeping
salads fresh and
exciting is to go
with the flow of seasonal ingredients.
I get equally
excited with different variety of
salad recipes, as I would by seeing a rich decadent dessert or a nice aromatic entrée.
I am
excited abt this recipe... I LOVE iceberg lettuce and silly me, while I often enjoy wedges of it when I am not in the mood to prepare a whole
salad for dinner, I have never enjoyed it wedged
WITH DRESSING!
Salads aren't very
