We've heard of
bakers experimenting with aquafaba
as a whipped egg white substitute, but we haven't used it in this application, so it would be an
experiment.
As for making basics with Ratio, I think those are the perfect recipes to
experiment with, because gf or not, it just makes you a better
baker!
But despite Twinkies and prepackaged cakes at supermarkets, dedicated
bakers like my wife Mary Jane have preserved the old recipes
as well
as experimenting with new ones.
I just kept reading and
experimenting — and of course, books on bread kept getting better
as bakers rediscovered the old ways to make artisan bread.
