Our dark chocolate is made for us by a local chocolate maker, using
extra cocoa butter to deliver a creamy chocolate flavor without the need for refined sugars.
I did add in
the extra cocoa butter and rewhipped but its still hard at room temperature, I have to scrape it out of jar to put on my skin!

Substitutions that worked fine: I didn't have espresso powder, used brewed coffee instead — about a cup, replacing the water (so 1 cup water, 1 cup coffee for liquid); also I didn't have an ounce of unsweetened chocolate, used unsweetened
cocoa powder (3 Tablespoons) and an
extra tablespoon of
butter.
