I replaced the milk in both the cake and frosting with unsweetened coconut milk to give
it an extra coconut kick - perfect!

Plus, a little bit of shredded
coconut gives it an
extra kick (both in taste and nutrition).
Things I changed: - cut the sugar by about half, using mostly dark brown sugar for the molasses
kick - scratched the nutmeg and allspice but added about 1/3
extra of all of the other spices and also added nearly a tsp of ground cardamon - replaced the veggie oil with melted leaf lard - scratched the raisins - baked it on a deep sheet for only ~ 20 minutes - just barely until firm to the touch - then cut that sheet into three layers - replaced the icing with my own 16 ounce cream cheese, 8 ounce butter, ~ 6 ounce heavy cream, ~ 5 ounce honey, 1 tsp vanilla combo - toasted the
coconut before dressing the cake.
Add home - made
coconut sambal for a little
extra kick.
I use frozen berries with 1 cup of
coconut milk (or any seed / nut milk), 1 tb of maca powder, 1 tb of ground flaxseed, 1 tb of quinoa flakes, 1 tb of barleygrass or wheatgrass powder, 1 tb of hemp protein powder, a handful of spinach or kale, and half an avocado works well too for
extra creaminess, 1 - 2 medjool dates or dried figs for sweetness and a teaspoon of frozen ginger for a fiery
kick to wake you up.
Not to mention the
coconut sprinkled on top gives the vanilla frosting an
extra kick.
