A very busy month has had me looking towards recipes that require little
extra work from me and
meals that make large quantities so that we're set
for leftovers
for a couple days (or in this case, almost the entire
week).

for meal planning that I don't need to deal with during the school year, and as you'll see in this
week's Menu Plan Monday below and in the
weeks to come, our
meals will have fewer carbs to account
for the abundance of carbs I know they eat at camp.
I mean sure, I'll indulge at a party, or have a few
extra treats, but
for me it's being so busy that I don't
meal prep, or even make it to the grocery store to grab anything of substance
for the
week.
This one is
extra special because I'm actually including THREE different
meal ideas... one of these has an option
for a sweet variation which means you could potentially have FOUR
weeks worth of make ahead breakfast ideas
for the entire month!
Store
extra pork in the fridge (it'll give you
meals for the next
week) and consume within 5 - 6 days, otherwise, mix the leftovers with the rest of the cooking liquid and freeze in an airtight container (I use ziplock bags smooshed flat to take up less space).
I know it seems like more work and
extra mess, so don't try and do it
for every
meal served, but one to two times a
week serve family
meals from serving bowls and plates on the table.
Planning ahead allows me to cook things in bulk and freeze
for a future
meal or make
extra of a protein to use in a quick
meal later in the
week.

Two of our dinner
meals this past
week were loaded with fiber: tortellini soup (with
extra kidney beans
for fun) and black bean pumpkin chili.
When cooking meat, fish or chicken
for dinner simply cook up
extra portions, pre-portion out servings
for future
meals and vacuum seal them
for the rest of the
week.
Make enough dinner the night before so you can just eat leftovers
for lunch and not have to worry about planning and preparing an
extra 7
meals each
week.
Think about if you really want your partner hounding you about skipping the gym after work or
for adding an
extra cheat
meal to your
week, and if you want to do the same
for them.

for salads, which means that if I plan ahead and make a few
extra, this egg curry becomes a very quick and easy weeknight
meal.

week (plus, I can make lots of
extra and we'll have leftovers!)

You can also take
extra care by placing them in the litterbox after naps,
