These delicious whole grain spelt and oat banana
muffins make the perfect snack or healthy breakfast for kids or adults, you can choose to make these slightly healthier with less sugar and a sprinkling of oats on
top, or make them into more of a sweet treat with a little
extra sugar and chocolate chips
Of course, the super thin sliced Meyer lemons, coated in sugar and oven roasted to carmelize and candify (yes I just made up the word candify, apologizes to the word police), made for a wonderful decorative
topping to the
muffin as well as added a little
extra sweet
top spot to the
muffin.
To make them
extra pretty, I like to
top the «
muffin» pies off with homemade whipped cream, a halved pecan, and a dash of cinnamon.
While these
muffins are a bit more work than regular «mix - everything - in - one - bowl - and - put - in - oven»
muffins, they are definitely worth the
extra few minutes, with their sweet and tasty sticky
top, and their prettiness.
Extra chocolate chips might put these over the
muffin top!
Pour into 16
muffin cups (will have
extra after 12 cups are filled) and bake 20 minutes or until the
tops begin to brown and a toothpick inserted comes out clean.

Instead, add a crumb
topping (which takes just a few minutes of mixing with your fingers) to protect those blueberries and make
extra yummy, happy
muffins.
For
extra tall
muffins, make sure to fill your
muffin liners to the very
top.
The only problem was the part where I got to take home all the
extra muffins and cinnamon rolls... I ate so many
muffin tops it was unreal!
I
topped my

I added an
extra cup of coconut flour which thickened the batter a bit and then poured it into a
muffin -
top pan to bake the cookies.
Break a date in half (or fourths if they're
extra large), and gently push into the batter so that some of the
top is still exposed, but some is down inside the
muffin.
But the basic batter in these
muffins is so perfectly balanced on its own that you can leave out the compote, sprinkle the
tops of the
muffins with a bit of
extra sugar and they'll still be delicious.
I filled my doughnut pan to the
top and still had
extra batter for 3 good size
