For a plain vanilla shortcake, omit lemon zest and basil and add
an extra teaspoon of vanilla extract
I skipped the mint and replaced it by
an extra teaspoon of vanilla extract, and added a small pear in the cream mix.
I used coconut oil instead of vegan butter in the base, added
an extra teaspoon of vanilla and half a teaspoon of chia seeds to the filling, and chopped walnuts plus seeds to the topping.
