The Japanese locate their tofu
factories very close to animal
farms because more than 95 % of the okara (soybean pulp) is fed to animals (mostly
hogs and dairy cows) and about 4 % of the okara becomes fertilizer (compost) because it is fairly rich in nitrogen and trace minerals.
