I planned on using low fat Ricotta in this dish because I'm generally not a fan of
fat free cheeses, but my grocery store was out.
@Stephanie: I made it using skim milk, fat free sour cream and
fat free cheese.
Decided to go ultra low - cal and do light sour cream, skim milk,
fat free cheese, and turkey bacon.
There are some good alternative low fat and
fat free cheese sources, such as laughing cow light, alpine lace and Jarlsberg lite, but unfortunately at the end of the day nothing really taste the same, so live a little... well just a little, 1 oz every now and then to be precise.
I am not usually

Since the soup is still
fat free at this point, I'll usually top it with a little cheddar
cheese because I deserve it (freeze - dried

fat free, switched to regular
cheese and it did wonderfully!
Great idea substituting the cream
cheese with
fat free yogurt
I did double the recipe and replaced the bacon with turkey bacon, and used
fat -
free versions of the cream
cheese, milk and potato soup to make this a lighter dish.
For the best flavor, I highly recommend using a decent quality Feta
cheese, don't use the
fat -
free stuff, it's awful!
Try using some lean turkey bacon,
fat -
free Swiss
cheese, and
fat -
free mayonnaise if you feel like cutting back on the
fat.
So while these are by no means diet food, they are much lighter than most of the recipes for creamy delicious enchiladas I've come across, for example I cut 4 cups of
cheese and swapped full
fat sour cream for
fat free greek yogurt.
By using super-lean ground beef,

free mayonnaise, and

free cheese, we have cut the
fat to less than half of what is in the original.
All that's required is using a

free cream
cheese in lieu of the regular kind.

For this conversion, well replace those fatty ingredients with substitutes such as evaporated skim milk,

free milk, Butter Buds, and a great
cheese - like substance made from straining yogurt with a coffee filter.
Made this tonight — using medium enchilada sauce so it would a little spicy and a mix of
fat free amd reduced
fat shredded
cheese (because that's what we had in the fridge!)
I use
Fat Free Feta
Cheese — I can't tell the difference between regular and FF.
Nate and I both went straight for my chili at the church event because we knew it was delicious and didn't want to take our chances Plus with only 1/2 cup of
cheese and 1/2 cup of sour cream (and I used
fat free) mixed in we knew it wouldn't be too unhealthy either.
Without sacrificing the fabulous ricotta
cheese (I used a delicious
fat free ricotta from Trader Joe's) and mozzarella
cheese (a reduced
fat shredded mozzarella), and also by making a few healthier substitutions, you get a very nicely sized piece of lasagna for just 6 Points.

For lower calories, use splenda instead of powdered sugar and get a

cheese... Still tastes good!!!
Also, for a slightly less guilty version, I sauted the onions / garlic in a garlic olive oil instead of butter, used reduced
fat milk instead of whole, and used a
fat free cream
cheese and it tasted just as rich and heavenly!
