I served two «cupcakes» on a bed of lettuce and tomatoes (0 points) and topped it with 1/4 cup
of fat free sour cream (1 point).
We had some leftover and I mushed up the cupcake and added salsa, guac and
fat free sour cream in a wrap... so good!
I also didn't not put cheese sauce but we
put fat free sour cream when serving it.Since I only had 9 small corn tortillia I just made layers instead of rolling them.
6 pieces low - sodium bacon 1/2 tomato, chopped 1/2 onion, chopped 1 scallion, chopped 1 cup frozen spinach, cooked and squeezed dry 6 eggs pepper to taste 1/4
cup fat free sour cream 1/2 cup shredded mozzarella cheese (part skim) 1/2 cup shredded cheddar cheese (low fat)
Lawd knows they are no pasta, and I wouldn't suggest doing the Hungry Girl thing and loading them up
with fat free sour cream and Laughing Cow cheese and pretending it's fettucine alfredo (ick).
@Stephanie: I made it using skim milk,
fat free sour cream and fat free cheese.
1/2 cup reduced fat or
fat free sour cream 1/4 cup ketchup 1 tablespoons fresh chives, finely chopped Dash salt & pepper
I like to fill them with fresh vegetables, salsa, low - fat cheese,
fat free sour cream or plain greek yogurt, beans or Morning Star farms «Grounds» (a great vegetarian soy - based beef substitute which is great in the microwave).
