Instead of using low
fat or substitute; the cream
cheese is mixed with half
ricotta, which is naturally low in
fat and high in calcium and protein.
I also substituted the heavy
ricotta cheese with low -
fat cottage
cheese and kept the mozzarella to a minimum — just a skosh in the filling and a bit sprinkled on top.
So I used 1 cup of
ricotta cheese & half a block of
fat free cream
cheese.

Without sacrificing the fabulous
ricotta cheese (I used a delicious
fat free
ricotta from Trader Joe's) and mozzarella
cheese (a reduced
fat shredded mozzarella), and also by making a few healthier substitutions, you get a very nicely sized piece of lasagna for just 6 Points.
I used full
fat ricotta and part skim mozzarella — you could reduce the
fat and calories by using lower
fat cheeses, just be aware that your carbs would increase.
I couldn't find FF
ricotta at my grocery store, so I used the low
fat version and substituted FF cottage
cheese.
I am not usually a
fat free
cheese fan but FF
ricotta totally tastes the same to me.

I didn't use the cottage
cheese (not a fan) just used 2 containers of
ricotta (one non-
fat and one low
fat) and it turned out great.
I planned on using low
fat Ricotta in this dish because I'm generally not a fan of
fat free
cheeses, but my grocery store was out.
To reduce
fat and cholesterol, they can be made substituting two egg whites for each egg, using reduced
fat cheeses,
ricotta or drained cottage
cheese or naturally lower
fat cheeses such as mozzarella, Parmesan or lower
fat queso quesadilla.
I still use full -
fat ricotta and shredded mozzarella because if you make me choose, I'll pick
cheese over pasta any day.
Ricotta cheese is a good source of low -
fat protein... and if you serve these pancakes with mixed berries and sliced bananas instead of syrup... then you've kept things on the healthy side.

The
ricotta version has healthy
fat and protein from
ricotta (which is pretty low calorie compared to other
cheeses at 50 cal per 2 tablespoons) and pistachios, and tons of vitamins from the fruit.
If your physician advises you to limit saturated
fat consumption, realize that, because of the
ricotta cheese, this shake is relatively high in saturated
fats; therefore, you may want to enjoy it only occasionally.
Other sources of protein include tofu, tempeh, beans, chicken, fish, low -
fat ricotta and low -
fat cottage
cheese.
