A faulty oil pressure switch may leak oil and cause the oil light to come on.
Aside from a sometimes
faulty oil pressure gauge, it's a clean, no - surprises example.

A weak or worn clutch cover can do it, as can the
pressure plate if say a spring has failed or they've become weak, but as you say the clutch has been replaced already I think unless the new parts were
faulty (which does happen) you could be looking at perhaps an
oil contamination issue on the clutch if the rear main
oil seal is leaking.
Brian Knoblauch in the comments below points out that a
faulty oil pump can also cause the
oil pressure to drop.
The
oil pressure gauge can be finicky at times and has been diagnosed by Siemans Mazda as a
faulty gauge and not a mechanical issue.
