I never peel my
butternut squash before I
roast it because the chewy,
roasted skin is my
favorite part (plus, it makes my life so much easier).
My
favorite new idea from this recipe is the addition of
butternut squash which I coat with a little olive oil and
roast and just stir into the chili during the last few minutes of cooking.
Ingredients: 1/2
roasted butternut squash 1/2 of the batch of mushrooms and onions 1/3 plain cashew sauce 1 serving of your
favorite, nutrient - dense pasta.
