Ever since I discovered the fish
taco, a Cal - Mex specialty that originated around San Diego and Baja, it's been one of my
favorite summer
dinners, especially for a crowd.
Any left because I'm coming for
dinner:) I love cooking with pork too and
tacos are a
favorite here.
Some of my
favorite dinners are;
taco soup, enchiladas made with left over
taco soup, cast iron skillet shepherds pie, chili with cast iron skillet cornbread, chorizo egg scramble burritos, crock pot sausage meatballs and spaghetti, mac (aka any pasta) and cheese sauce with shredded chicken and bacon... It's a total love affair!
Tacos are one of my family's
favorite dinners, and it is easy to make them gluten free, dairy free, and good for you (especially if you skip the tortilla altogether and use a piece of lettuce, instead).
We cooked up some recipes from the book, including the Fish Taco Buffet, inspired by the Spring Break the two of us spent together in Costa Rica circa 2007, and the
dinners we created there in our rented condo's oven.We also added one of our
favorite recipes, Mini Pulled Pork
