My
favorite version is when sprinkled with
toasted nuts and cranberries!

favorite fall comfort foods must be curry (full of veggies and coconut milk) with rice OR pumpkin coconut milk soup with a fat pumpkin seed oil drizzle.
My
favorite, and fastest, go - to meal is to cook whole wheat pasta and eat it with fried zucchini, pesto (bought fresh at the market), fresh parmesan, and
toasted pine
nuts.
It was also incredibly easy to prepare — simply whisk pumpkin puree with spices, vanilla, and a little maple syrup, and layer it with greek yogurt and your

nut mixture and roll with your hands to form a ball, continue until all the mixture is used, placing about 2 inches apart on a baking tray Bake for 25 - 30 minutes until a slight crust forms Serve over pasta, top with your
favorite sauce!
Bread pudding is one of my
favorites and this recipe is quite similar to my own «method» (meaning that I do not use a real recipe but incorporate what is on hand with the basic ingredients) My very, very best version uses leftover, homemade biscuits that have been split, buttered and
toasted... add some dried peaches cut into small pieces, the plumped cranberries,
toasted nuts and usually a chopped apple.
