I feel about coconut flour — I love using it but only in conjunction with other baking flours.

The best part
about coconut flour is that it absorbs liquid so it still
feels dense too - not like other
flours that don't fill you.
Almond
flour, gluten - free oats,
coconut palm sugar, flax seeds, pumpkin, and
coconut oil deem these muffins a breakfast you can

about what's inside them (almond and
coconut flours, raw nuts and seeds,
coconut oil and eggs) and my kids think they're actually eating «cookies» for breakfast.

flour, and I was very happy to see that this was made with
coconut flour, though I also just heard (today!)
It's an excellent alternative to traditional wheat
flour because it's high in fiber (
about 5 grams per tablespoon) and lowers the glycemic index (the measure of a food's impact on blood sugar).1 In a nutshell, that means
coconut flour helps you to
feel fuller (and all that fiber helps to keep you regular), and the lower glycemic index means your blood sugar won't spike as quickly as grain - based
flours.2
If after
about 5 minutes you still
feel it's too runny, you can add 1 Tbsp of
coconut flour.
About almond flour: I tend to use recipes that call for coconut flour rather than almond flour — or a blend of the two — because a) almond flour is expensive, b) it's just too DENSE, and c) I feel some concern about some of the anti-nutrients that are in almonds and also am not sure how it upsets my omega 3:6 balance when I over-consume alm
