muffins offer a grab - and - go

breakfasts, lunchboxes, and after school snacks.

breakfast biscuit cups, and mini meatball snacks are just a
few ways that you can create healthy make - ahead meals easily using a
muffin tin.
I shared a recipe for these healthy
breakfast muffins here on the blog (in Finnish) a
few years ago and as I know a lot of my readers have liked these, I thought I should make them again and share the recipe in English as well.
I haven't been blogging because I was mostly making recipes I've already made, various
breakfast muffins and a
few treats to give away over the holidays.
Fill your
muffin tin 1/4 full with pancake mix, toss in a
few of your favorite
breakfast ingredients (bacon, sausage, blueberries — maybe even a little dollop of maple syrup?)
The
breakfast is adequate with bagels,
muffins, cereal, and donuts, BUT you will definitely want to supplement it by packing a
few ESSENTIAL things since there was no protein in the variety.

I sat with this for a
few minutes thinking about the reasons inner - city kids I've known might not eat
breakfast at school, or at least why they might continue to feel that they need to eat those subway
muffins and bagels.
So if you have a
few minutes to spare on Christmas Eve to prep these, you can have freshly made
muffins for your Christmas morning
breakfast or brunch!
