It's so easy to make Strawberry Ice

As always, chill your

few hours, then scrape off the top, solid part.
It's as easy as blending a
few cans of coconut goodness in your blender and freezing in your ice
cream mixer.

They
can be made up with anything at all, but a beautiful combo is a layer
of chia seeds blended with pureed berries, a layer
of whipped
coconut cream (with a
few drops
of vanilla added) and topped with some homemade granola with
coconut, oats, seeds, dried berries, & apple puree.
if you
can eat dairy you could totally use some non-fat vanilla Greek yogurt instead
of coconut cream if you'd like to save some fat macros and bump up your protein intake by a
few grams.
I blended one large mango, half a large avocado and put a half cup
of coconut cream in — but unfortunately I didn't shake the
can properly so I put in very thick
coconut cream, followed sheepishly by a
few splashes
of the watery milk that was left over.
Sometime I take any remaining
coconut cream (left from scooping out
of chilled
can of coconut milk) and whip it with a touch
of vanilla (I like to use a scraped vanilla bean or paste if I have it cause I like the specks — but a 1/4 to 1/2 tsp
of good quality extract works too), I usually add a
few drops
of vanilla SweetLeaf drops (
coconut sugar would work here too if you aren't concerned with sugar / carbs).
To make dairy free

coconut cream concentrate, which is another name for
coconut butter).
