In defense of the rice ones from Trader Joe's (AKA
Food for Life brand
at any other store)-- yes, they break and yes, they do not behave like a regular tortilla and are frustrating but WOW do they make the best quesadillas and if you have a problem with corn, try cutting them up into chips and frying them up in an inch of olive oil in a 4 quart pot on the stove — the BEST tortilla chips that stay crispy and do not turn stale if you put them in a plastic zippered bag for up to a
few (yes
few) weeks.
This soup, however, I actually wrote down when I made it a
few months ago... and up until the last
few days (when I started trying to avoid high FODMAP
foods — of which butternut squash in medium and thus best eaten only in small quantities, and garlic and onion is high and therefore avoided) it has served me very well since butternut squash is cheap and readily available
at the moment.
I made it on Saturday for V - day (so my sweetie and I could come home from an incredible dinner
at a Brazilian steakhouse and indulge in a tasty healthy whole -
foods dessert ~ objective, maintain the «healthy» aspect of our nutrition plan, AND have an awesome sweet treat all while saving a
few dollars on an overpriced dessert
at the restaraunt:P) AND it was a total success!!!
When I've gone without proper snacks or NO «junk»
food or sweets for awhile, I dive for potato chips or red velvet cupcakes!!!! Albeit one bag or one cupcake

The gist of the blame aimed
