Lunch today was a salad with romaine, tomato, the
last few mushrooms and a tsp of ranch dressing, plus my 2 leftover pieces of pizza from last night
I cut the recipe in half and since I didn't quite have 1.5 lbs of beef, I added
a few mushrooms.
Save
a few mushrooms for decoration, and then distribute the remaining in the various muffin moulds.
I think next time, I may add
a few mushrooms in their too for some more texture.
On the bottom left is a «pizza» made on a whole wheat tortilla with marinara sauce,
a few mushrooms and onions, and shredded mozzarella.
When serving, top the quinoa with
a few mushroom pieces, a handful of nuts and a drizzle of extra virgin olive oil.
To serve, slather each piece of bread with the yogurt, arrange
a few mushrooms on top, and finish with lentils, and the roasted scallions.
I tried a version of this (added
a few mushrooms and some fennel, left out the chickpeas) and it was soooo delicious!
Left out the hot sauce and cayenne pepper added a tiny bit of Heinz chili sauce and
a few mushrooms that I had left in the fridge.
I hand» t thought about mushroom soup in the longest time, but after seeing
a few mushroom soup posts on Sunday Night Soup Night, I was inspired to try making my own mushroom soup again, but from scratch!
