While these quinoa, sesame, rice cakes would be lovely along side a
piece of fish (I served it with salmon the other night), I am really crushing on this version right here, simply topped with
avocado, spicy mustard, and a
few other goodies that can be adapted depending on what greenery you have in your fridge.
To start building your summer rolls, place a
few sprigs
of basil and cilantro down, then 2 - 3
pieces of each vegetable, 1 1/2 tablespoons
of tuna and lastly 2 slices
of avocado on top
of the tuna.

I fry or poach an egg I toast 2
pieces of sourdough bread (use whatever bread you'd like that's just my fave) instead
of butter etc I use coconut oil then I mash up whole or half an
avocado depending on how hungry I am squeeze some 1/4 lime or lemon into avo spread it on top
of the toast and sprinkle salt and pepper as well as some pine nuts (or anything else you'd like to top it with) and when I have tomatoes I like to cut up a
few and add them as well.
On the three days a week I did weight training, I would have a
piece of fruit like a banana prior to my weights session for energy, a small serve
of sweet potato or other healthy starch carb, and a protein shake post workout to aid muscle recovery.On the remaining days I would stick to lean protein, salad or steamed non-starchy vegetables, low - carb bars, shakes, Greek yoghurt and small amounts every
few days
of healthy fats like almonds and
avocado.
