Wholemeal tortilla or chappati wrapped around diced cooked chicken breast / marinated tofu pieces — shredded lettuce, diced tomatoes, 1/4 avocado and
a few tablespoons salsa or 1 tbsp vinaigrette.

salsa (recipe below), then top each sweet potato round with a dollop of guacamole and add a cilantro leaf for both flavor and presentation (total win!).
