An early fall picnic with apple butter
filled hand pies absolutely must happen!
You can use them to top off pot pies or make fruit
filled hand pies or fake out danishes for breakfast or make puff pastry tarts topped with all sorts of delicious ingredients for appetizers.
I am contemplating how I will use mine... I am thinking of using it to
fill hand pies, maybe?
To
fill the hand pies, take a circle of dough and place the filling in the center, about 1 tablespoon.

The amount you can fit inside will depend on the size of your blueberries (I was able to fit 2 tablespoons of
filling in each
hand pie).
** Example: Place your left
hand under the
pie dough under the wax paper and grab the left side of the wax paper with your right
hand and flip it over onto the
filling.
(The size of the cutter will determine the amount of
filling and the number of
hand pies you'll get.)
If you are feeling adventurous you can put one
hand under the
pie dough still on the wax paper, hold one edge of the wax paper so that the top arm crosses over your bottom arm and flip the
pie dough over top of the
filling and bottom dough.
Easy to eat because the
filling to crust ratio is just right for portability, even when cut into generous sizes — no skimpy
hand pies — large enough for a crowd, and delicious, which is obviously the most important part.

If you really want to try this recipe but don't have any frozen sour cherries on
hand, then it might work with canned cherry
pie filling by adding a tsp of red wine, pepper, and fresh thyme to it.

Apart from always having really nice fresh herbs and vegetables they also sell Turkish filo pastry
hand pies called Börek,
filled with spinach and feta cheese (similar to the Greek Spanakopita).
Just do note that this
filling expands when baked, so your
hand pies may have a couple more cracks than with the other two
fillings.
