I
usually like to
fill my
salad with veggies (cucumbers, red bell peppers, etc), a touch of cheese (feta, Gorgonzola, Parmesan) and sometimes some dried fruit or toasted nuts.
It was more
filling than just a
salad but more vibrant and nutritious than the sandwiches we
usually eat around here.
I tend to take a dish to insure I have a veg option, so I
usually make some kind of bean
salad,
filled with loads of fresh veggies, maybe some chopped arugula or other
salad greens, chopped fresh herbs, and a bright vinaigrette.
With all of the heavier, comfort food meals that
usually accompany fall and winter — it's nice to have a fresh
salad that's lean, clean and green but also delicious and
filling in a good way — not a heavy way if you know what I mean.
Since I
usually eat a
salad for lunch, I always like to make something more
filling for dinner, especially to ward off those nighttime munchies.
I most often mold my aspic in a loaf pan because I
usually serve it in little squares, but you can use a ring mold as well and
fill the center with chicken
salad or something similar.
I
usually don't love
salads as dinner options because I want something more substantial but this was
filling and the BBQ flavor makes you feel like you're having something savory.

filling complete meal.
Most of my workouts are done about an hour after lunch which is
