I wanted to make an easy, healthy,
filling recipe so this
vegan veggie quiche with sweet
potato crust was born.

filled with spicy smashed
potatoes, fajita vegetables, fresh corn salsa, and your favorite tomato salsa.
My partner in kitchen crime, Davin, suggested I add a layer of
vegan cheddar cheese between the layers of meat veg
filling and cauliflower
potato puree, and that idea was a perfect addition.
Some of the recipes that caught our eye include

You can throw in
potatoes to make it more
filling, take out the chicken essence and use vegetable broth to make it vegetarian /
vegan, cut up sausage for more protein...

filled with cucumber, spinach, carrot, chickpea omelette and roasted gochujang sweet
potato.

Vegan Breakfast Tacos are

potato, or some of all and enjoy it as a chunkier dip, as a sauce for nachos, a
filling for enchiladas, or even as a base for a casserole, say
potato and Poblano?
