In many U.S. grocery stores, you are most likely to
find bok choy that features green spoon - shaped leaves and slightly flattened white stalks.
But you may also
find bok choy being scientifically referred to as Brassica chinensis (where «chinensis» is used as a species name rather than a subspecies name).
This was a very tasty dish - pretty much followed the recipe, using bratwurst sausages, aside from not being able to
find bok choy so used fresh collard greens.
We've
found bok choy to be a delightful alternative among the cruciferous vegetables for its quick preparation, enjoyable and easy - to - chew texture, milder and somewhat sweet taste, and versatility in recipes.

If you can't
find large
bok choy, replace it with 16 ounces of quartered baby
bok choy instead.

But last weekend, while doing my routine produce shopping at my own regular supermarket, in the spot that was usually reserved for
bok choy, what should I
find but Garlic scapes, all neatly bundled up and packaged by the pound!!!
It's flexible, too — use a different grain if you'd like (this is adapted from a rice dish in Vegan Express); use a different green other than
bok choy (kale would work); and if you can't
find edamame or prefer not to use these tasty green soybeans, substitute green peas.
The green leafy member of the cabbage family can be commonly
found year round, so if you fall in love with this
bok choy recipe, you won't have to part ways with it come autumn.

bok choy, kohlrabi, turnip, collards, arugula, watercress, radish, and mustard greens.
Unfortunately, I had to forgo the
bok choy since I couldn't
find any, but I would love to try it if I can ever get my hands on some.

Among the anti-inflammatory compounds in
bok choy are anthocyanins, a type of polyphenol, and thiocyanate, an antioxidant that's been
found to protect cells from inflammatory substances produced in response to injury or infection in your body.
I once
found myself «aww - ing» over a little
bok choy that I just plucked from the ground.
