Made these with shiitakes since I could not
find chanterelles and they were absolutely divine.
If you can't
find chanterelles, any meaty wild mushroom will work.
Also I couldn't
find chanterelles on short notice.
Unfortunately, this time I only went for a quick search and didn't
find any chanterelles.
If you can't
find chanterelles, oyster mushrooms work just as well.

Wonder of wonders, I
found FRESH
chanterelles.
I had
found it at the library while researching Scandinavian food, and this dish —
chanterelles and potatoes with lemon and dill — was one of the first recipes I featured on the blog.
The season for
chanterelles is fleeting, but if you can still
find some, I hope you'll give this recipe a try.

chanterelles can't be
found, no worry.
