About it being «artificial» (using it loosely as i do nt want to be in an argument nor any kind of conflict) I just meant that it uses artificially produced
kefir starters (which also lacks organisms that can be
found in traditional
kefir) and not the
grains that we all use and love.
If it is not possible for you to obtain certified raw milk, begin with the best quality pasteurized whole milk you can
find, milk that is not homogenized, and culture it for 12 hours with piima culture or
kefir grains to restore enzymes lost through pasteurization (pages 83 and 88).
