I am having trouble
finding lemongrass that is not the dried kind in a jar.
If you have trouble
finding lemongrass, substitute 1/2 teaspoon grated lemon rind.

It is not common to
find kaffir lime leaf or
lemongrass so they can be omitted.
While beans soften, make a sofrito by sauteeing on medium high heat, in 5 tblsp olive oil, 1 medium onion, 4 garlic cloves, & 8 to 10 Cachucha peppers (a caribeean cousin of Habenero, citrus flavor without the heat — I've never

Lemongrass is a beautiful ingredient but try to
find a store that sells nice fresh stalks.
Here is the ingredient list I
found for the brand I recommended: Dried red chilli, Shallot, Garlic, Soybean oil, Sugar, Salt, Fresh turmeric,
Lemongrass, Spices (coriander seeds, cumin, cardamom, cinnamon, bay leaves, lesser galangal, cloves), Galangal, Curry powder (mustard, cumin, coriander, fenugreek, wheat flour, chilli, pepper, fennel, turmeric), Kaffir lime.
Items like
lemongrass can often be
found in paste - form (in my neck - «o - the - woods, it comes in a tube and is stocked in the produce aisle with the packaged fresh herbs and mushrooms)-- enough for many meals.
If you can't
find «lazy»
lemongrass (comes in a jar) then use two
lemongrass stalks, removing the tough outer layers and pounding the centres into a paste.
Unlike the more common curry laksa
found in Australia, the Penang version is fish - based and strongly flavoured with tamarind,
lemongrass, turmeric, Vietnamese mint leaves and ginger flower.
If you can't
find galangal (blue ginger) in your area, substitute it with another stalk of
lemongrass.

Ok, I suppose you need to have some uncommon ingredients on hand, like
lemongrass, but all of the spices I mention can be
found in the spice section and reused for a myriad of other delicious recipes!
My local Whole Foods always carries
lemongrass but I was surprised to
find kaffir leaves!
Modifications: — i pretty much doubled everything — got 3 stalks of
lemongrass (the large ones in produce section, not the tiny packaged ones)-- used crimini mushrooms (if you can't
find shiitake)-- added one bell pepper (in inch squares)-- couldn't
find the lime leaves so I added 1.5 quartered limes at the time you're supposed to add the leaves (NOTE: TAKE THESE OUT As soon as it's done simmering otherwise the lime skins will keep «leaking» and make the soup too bitter - I made this mistake but tasted the soup at the end of simmering and it was perfect then)
I'm a big fan of Tom Kaa Gai and have made it at home before, but I have difficulty
finding kaffir leaves and sometimes
lemongrass — two essential ingredients.
But just in case someone else stumbling across this
finds this useful... I've been researching this myself this week, and discovered a Journal article (Journal of Gastroenterology or something — I don't recall off the top of my head) that said that several essential oils — most especially
lemongrass and lemon verbena — were effective for killing H. pylori.

This version uses
