My love of food stems from family, so obviously you'll
find a few family favorites, like my grandmother's insanely delicious Brinjal
curry (V+GF), mom's comforting Coconut Congee (V+GF) that we eat ONLY on Good Friday, or the Vegetable Stir - fry that my sweet dad made for my vegetarian mom to thank her for cooking
meat for us.
In some recipes you
find that you are advised to rub the pieces of chicken or
meat with
curry powder, and fry them with onions.
Beef patties, the empanada - like pastries stuffed with
curried meat can be
found here, as they are a favorite in Haitian and Jamaican kitchens alike.
This isn't really a recipe, but I
find coconut oil especially delicious when making a Thai
curry - I just sauté
meat and vegetables in it, and then add
curry paste and coconut milk.
But it's some of the best you'll
find anywhere: tender thigh
meat marinated overnight in
curry powder, sugar, and garlic, deep - fried and then grilled to an ideal balance of juiciness and char.
The seafood, unsurprisingly, is superb, but you'll also
find wonderful
curries and rougaille (a Creole stew with tomatoes and
meat or seafood).
