I've been wanted to make these for a long time but where I lived I couldn't
find yuca!
But do you go to a special grocery store to
find yuca?
I can
find yuca at my local grocery in the «ethnic» produce section (with the plantains, mango, and papaya).
I've been looking for days Unfortunately, I checked all food stores around here, even the specialty stores, and I've had no luck
finding any yuca.
I have a few Australian readers who have
found yuca in the frozen section — you could look there or ask your grocer to order it for you!

You will need to be able to
find a few pieces of produce that, depending on where you live, your regular grocery store may not carry (like plantains,
yuca, malanga, culantro, chayotes).
Not that I know of due to
yuca's majestic qualities but if you play around and
find something that works well, please come back and let me know!
I
find the fiberous center difficult to work out in fresh
yuca.
It appears that Cyrex based their array off of this paper (full text free), which actually
found that
yuca (called tapioca in the paper) was not significantly different from the control for cross-reactivity.

found that people make vegan bacon out of tofu, rice wraps, and even vegetables (see Hot for Food's cassava /
