Here's what I changed: I used a 15 - oz can of pumpkin (not pie filling — just pumpkin puree) in place of the bananas; I swapped out the spices for about 1 tsp each of cinnamon and ginger, and mixed those in with the pumpkin
first; I opted for the larger volume of maple syrup from the original
recipe, as the pumpkin wouldn't contribute sweetness the way the bananas do; I baked the batter as a dozen standard
muffins, which took about 20 minutes at 350.

My

muffins) didn't turn out well (flat), but I re-read the
recipe and decided my starter wasn't thick enough to begin with.
This is the second
recipe I have tried by you (
first was banana oat greek yogurt
muffins).
In terms of the
recipes, I made slight adjustments to both including adding a little more sugar to the
first recipe and adding a pinch of turbinado sugar to the top of the
muffins in both.
I also wanted to say thank you for your post in September last year about the sundried tomato and cheese
muffins - I tried the
recipe last weekend and they were fantastic - the
first thing I've been able to bake that my gluten free niece will eat!
