I must add that I had a revelation about how to cook chicken on the bbq — pound the chicken with
a the flat side of a meat mallet so it is a uniform thickness.
Using
the flat side of a meat tenderizer, flatten chicken to 1/4 - in.
If chicken isn't flattened already, place one piece at a time into a gallon sized freezer bag then, using
the flat side of a meat mallet, pound your chicken to 1/4 inch thickness.
Use
the flat side of a meat mallet to lightly crush the breadcrumbs.
Place between 2 sheets of plastic wrap and, with
flat side of a meat pounder, pound turkey to slightly less than 1/4 inch thick.
Pound lightly with
the flat side of a meat mallet until flattened and thinned out.
BUT, when you contain them in a nice ziploc bag and then «crush» them with
the flat side of a meat tenderizer, there's no runaway (or flyaway) pieces.
However, I hate digging out my food processor for small things like that, so I just used
the flat side of my meat tenderizer to pulverize them.
Not exact matches
I like to use racks like this when seasoning
flat cuts
of meat so that all
of the seasoning on the bottom
side doesn't stick to the counter.

meat is about 1/3
of an inch thick:
