In her Winter Mushroom Soup with Hazelnut - Lemon Gremolata, she
adds flavor depth with a dried mushroom broth, color and acidity with tomato paste, color and sweetness with yams and carrots, heat with hot chiles, and creaminess with coconut milk.
I find tamari to be especially great for vegan and vegetarian cooking — it helps immensely with
developing flavor depth and complexity when added to vegetables, and of course, it's an amazing addition to sauces.
I microwave it to really «cook» the cocoa to really give
the flavor depth.
