This version gets richness from
ricotta and bursts
of flavor from peppery arugula and
lemon zest.
The
lemon ricotta was divine and the whole combination
of flavors simply brilliant!
Here you have it, another
ricotta cake version but this time a
lemon blueberry
ricotta cake which I think has become my favorite just because
of the
lemon flavor.
The dish has a nice mix
of sharp and soft
flavors with the
ricotta and
lemon.
Having had the opportunity to travel through Italy in the Spring it was a revelation
of flavors...
lemons, capers, olives, fresh vegetables,
ricotta and grilled fish.
