I finally got this to work

Vegan Option: You can make these vegan
by using
flax eggs and vegan - friendly chocolate chips, but they won't be as puffy as the ones shown here.

by this time it should turn all sticky) or cooled aquafaba and olive oil.
My twist in this vegan version is to replace the
egg with a
flax - seed
egg and to develop the gluten
by tossing the ingredients well.
It's so easy today to purchase any premade gluten - free waffle mix and «veganize» it
by substituting the
eggs for
flax or chia
eggs, for instance.
The ingredients are fairly similar to my lentil burgers except I made it vegan
by replacing the
egg with ground chia seed (you could also use ground
flax) and added mushrooms to help give it a nice, meaty texture.

So I substituted the
egg for a combo of ground
flax seed and water, and made my own buttermilk
by adding a tablespoon of apple cider vinegar to almond milk.
I made them vegan

flax meal mixed with some warm water and 1/2 tsp of xanthum gum.
