flax seeds, but sometimes you just don't have those extra ingredients around the house and I almost always have
eggs around the house.
I didn't use gums or an extra
egg yolk, instead I used ground
flax seed as part of my flours.

did have trouble at first with a crumbly crust, but with the addition of a
flax egg (just ground
flax seed + water) the crust holds together beautifully.
I used Raw Almond Flour (not blanched); I used only three
eggs + one chia
egg + one
flax egg; and my pan was about 8.5 * 4, so a bit bigger than recommended; I
did not use the food processor, just mixed everything with a whisk and a spoon.
Flax gel doesn't emulsify or provide a protein structure network so my impression is that it wouldn't work as a drop - in replacement for
eggs in this recipe.

did try making these with
flax eggs and they
did not rise well and were somewhat gummy.
I made them vegan by substituting the
eggs for
flax eggs and I didn't have any applesauce handy so I mashed a banana and that worked great!
if you are an
egg lover or just don't have
flax seeds, go for the real
egg.
So here's what I
did: I made it using a
flax egg (1Tbsp ground
flax + 2Tbsp squeezed lemon juice), 1 1/2 tsp gelatin powder + 1 Tbsp coconut cream.

I have long said that I really don't care for «
flax eggs» as an
egg - replacer since
flax seeds have a really strong flavor (which, in fact, they
do).
Unless you really
do mean
flax egg, in which case then maybe add the instructions on how to make a
flax egg.
Yogurt adds a nice amount of moisture, but if you don't have any on hand, feel free to substitute
flax seeds or your favorite
egg replacer; they'll still turn out.

Coconut flour, almond flour and other grain - free / nut flours
do not act the same as traditional wheat flour - they
do not contain gluten, so they need binders like
eggs or
flax seed to make successful batters.

egg next time and see how you
do... if you use
flax seed and you grind it, add a bit of water to it before you add it to the mix and it will act a little eggy.

coconut flour can not be subbed for almond flour, i don't always know if a
flax egg will work for
egg, etc. i work very hard to create the delicious recipes to share with you and too many substitutions makes the recipe different than what i set out for it.
