:) Yes, I think either an enerG binder (premixed, obvs) or an extra
flax / chia
egg or 2 would
work to bind them back together... or even a pureed 1/2 of a skinned baked potato could
work well (pureed in a mini-food processor until sticky / goopy).
I haven't tried any substitutions for the Irish moss, but 2
flax eggs might
work best (2 tbsp ground
flax whisked with 1/4 cup water).

egg - substitute product or a
flax egg but I can't guarantee that it'd
work.

Since
flax contains polysaccharides, this theoretically won't
work the same way
egg whites will because unlike
egg whites, polysaccharides are really good at holding onto water.
Also, without seeing the recipe it's difficult to tell if this will
work with
flax gel because it depends on what the
egg is being used for.
Flax gel doesn't emulsify or provide a protein structure network so my impression is that it wouldn't
work as a drop - in replacement for
eggs in this recipe.

I chose to make the
flax seed
eggs, and just add some extra baking powder, and it totally
worked!
I made them vegan by substituting the
eggs for
flax eggs and I didn't have any applesauce handy so I mashed a banana and that
worked great!
I will tell you, though, that I made a second cake using only the
flax eggs and extra baking powder and I think it turned out gross, as in, I'm bringing it to
work today in the hopes that other people will be able to choke it down!
I also tend to keep leftover aquafaba (chickpea cooking water) in the freezer for occasions that call for quick crepe meals like this one, but if you're partial to
eggs and / or have
flax or chia, those options
work as well.

Chia Seeds Chia
eggs work very similarly to
flax eggs as they bind together when mixed with water, forming a great
egg substitute.

Flax Seed Honey: Use Agave Nectar but keep in mind it may be sweeter than honey so experiment!
I finally got this to
work egg - free by basically adding a chia -
flax equivalent of an extra
egg.
They'd
work out REALLY nicely (along with a
flax substitution for the
egg to be vegan).
But when I tried chia
eggs (and
flax eggs — which have a strong, unpleasant taste to me), not only did I not love the flavor, but they really just didn't
work to make fluffy vegan pancakes.
I think they would
work great with
flax eggs, as the originial recipe from Jenna calls for
flax eggs.
I think next time, to keep it Vegan, I will try making a
flax egg and see how that
works.
coconut flour can not be subbed for almond flour, i don't always know if a
flax egg will
work for
egg, etc. i
work very hard to create the delicious recipes to share with you and too many substitutions makes the recipe different than what i set out for it.
I have yet to test these cookies out with a vegan option, but since they only use one
egg, I'm thinking a
flax egg would totally
