I was just hoping to find out your thoughts on (or if you knew of any evidence to support) the stability of
flax meal in baking, considering it should be kept in the fridge?
I have made this bread twice now and the second time I made it with the same
flax meal in your link and it made a huge... huge difference... so much better and no need to use THM baking blend....
So what do you think the mixture of chia seeds to nut flour should be since you call for 1 cup of ground
flax meal in your recipe?

I see that this was a year ago, but
in have the same issue and I substitute 1tbls of
flax meal mixed with 3 tbls warm water to replace one egg.
For extra nutty flavor and texture, I mixed
in almond
meal, ground
flax seeds and chia seeds.
In a large mixing bowl combine almond flour,
flax seed
meal, hemp seeds, baking soda and salt.
(Any herbs of your choice can be used, I used all the herbs that were handy
in my kitchen pantry), and instead of eggs I used soaked
flax seed
meal along with some baking powder.
I also tend to keep leftover aquafaba (chickpea cooking water)
in the freezer for occasions that call for quick crepe
meals like this one, but if you're partial to eggs and / or have
flax or chia, those options work as well.
