My hubby and kids aren't big banana fans and can suspect even the slightest bit, so I think I'll try 1 banana with
the flax seed eggs and see how that goes.
I was wondering if you've tried mixing half chick pea and half coconut flour and doing
flax seed eggs instead of regular eggs?
I chose to make
the flax seed eggs, and just add some extra baking powder, and it totally worked!
Would it be possible to put a little note in the recipe to warn off anyone else who thinks they can sub
flax seed eggs for real eggs?

I use the general rule to not replace more than 3 eggs with
Flax Seed Egg Replacer when veganizing a normal family - sized recipe.
I just made these gluten - free and eggless, with the all - purpose gf flour mix from http://glutenfreegirl.blogspot.com/p/gluten-free-all-purpose-mix.html (modified somewhat based on the flours I had on hand), and
flax seed egg replacer, and 1/4 tsp xanthan gum.
Flax seed egg is ok, but it has no special flavor like the coconut or banana would, so I'd say... why bother?
A flax seed egg is simply made by mixing water & ground flax.

a flax seed egg substitute would still be fine.
The natural
flax seed egg replacer works really well and they don't crumble at all.
I really like
the flax seed egg replacer in this recipe as it gives the muffin a bit more texture.
I will try
flax seed egg to make it vegan.
My kids have dairy and egg allergies, so I used
a flax seed egg, vegan butter, and for the buttermilk I added one teaspoon of vinegar to the milk.
