Today I'm sharing with you a technique I discovered by accident that takes your coconut
flour cookies from too soft to a crisp cookie in a short period of time.

We made them today with my girls; everything that comes
from this site is called by my daughters «van Elsa», so these «Elsa
cookies» were really good (with some little changes: we didn't bake them so I added some extra coconut
flour, and we used mango in place of passion fruit, but they were really delicious and we enjoyed making them).

from coconut
flour, a pizza «sauce» that's not the traditional cream cheese, but a delicious coconut milk yogurt, and an abundance of fresh, ripe summer fruit.
I borrowed the proportions and method
from this very dependable recipe for chewy chocolate chip
cookie made

flour from the stellar food blog Cannelle et Vanille.
Over the years I've moved away
from using regular white
flour when baking so I'm really excited to have a grain - free, gluten - free version of these
cookies to enjoy.
If you find the dough is sticking to your hands like crazy, you can either
flour your hands, or mix some additional
flour into the dough to absorb some of the moisture (this would be the better option for these particular
cookies as any excess
flour on the tops of the
cookies from your fingers would be visible after they have baked).

cookies and not have the stuffed, sluggish feeling I get
from regular
flour
Slowly add the
flour mixture to the butter mixture.Using a tablespoon scoop, drop
cookies about an inch
from one another onto prepared baking sheet.

from under the parchment paper and carefully move the paper with the loaves onto a
flour - dusted overturned
cookie sheet or cutting board.
Lastly, with very sticky dough I roll out onto
floured foil or parchment — I find that cutting foil or parchment seems to help the
cookie cutter release
from the dough a bit more.

flour.
I like to add millet
flour to baked goods since it lends a great texture and flavor to everything
from bread to
cookies.
This means you won't be getting things like refined sugar,

flour, carob, almond milk, and other ingredients for foods children may be allergic to.
When freezing, I boil first, let them dry off a bit (a wooden cutting board keeps them
from sitting in puddles of water; don't put on a

flour recipe may work well, and you'll find that the additional fat and fluid in the
cookie prevents the flatter, crisper

I think for
cookies, after beating all the ingredients together, it takes time for
flour to absorb the oils
from the other ingredients.
