My favorite replacement for almond
flour is to ground
toasted sunflower seeds into a
flour in the food processor.
For a little extra texture, flavour and protein, a bit of

Pancakes, french
toast and waffles, though delicious,
are generally void of nutrients, high in sugar and made with refined
flour.

's super easy, so I definitely recommend giving it a go if the flavor throws you off!
If the recipe requires only an «eggy» dredging as in French
Toast, chickpea batter made by mixing chickpea
flour with water or milk
is a delicious alternative.
I swapped out some of the
flour for chestnut
flour (which can
be a bit tricky to find, but
is often at Italian specialty stores, some health food stores, and Amazon carries it as well), which adds an earthy, nutty richness to the dough that I increased further with the addition of
toasted pecans.
That said, if you
're new to using quinoa
flour you may want to try
toasting the
flour ahead of time to help mellow the flavor a bit.

is my preferred method for

flour because of the consistency in flavor.
In the same skillet,
toast the coconut, stirring constantly, just until it begins to turn golden (note:
toasting the coconut second will help unstick any
toasted rice
flour that
's stuck in the grooves of your pan if you have a textured pan like me).
Once the quinoa
is nicely
toasted, grind it in a spice grinder, blender or food processor, until you have a fine
flour.
The main reason why I choose to
toast my quinoa
flour is for taste.
