They're made with whole wheat
flour (I used white whole wheat), pure maple syrup instead of sugar, applesauce and zucchini to replace most of the fat in the
recipe, cinnamon and a
mix of both vanilla and almond extracts for a seriously addicting and healthy muffin.
It is a
flour mix that can be used in your regular
recipes without any other adaptations (for instance, the Xanthan gum is in the
mix already).
And what a disappointment when I receive one that just mentions» use a GF commercial
flour mix instead of regular
flour in that
recipe» and / or contains mostly naturally GF

To be honest I also went to make a third, with the half and half
flour mix, and noticed I did not have enough pumpkin so I subbed in some banana (sorry to go so far off the beaten path with your
recipe) but it also came out great.
When
mixing your ingredients, always follow the
recipe instructions, especially when it comes to beating in eggs and
flour, so if it specifies to
mix until just combined or to beat for 4 minutes, follow the instructions to get best results.
I'm especially happy that this
recipe has a
mix of coconut
flour and almond
flour because the texture is great.

flour — you use that ingredient best, out of ANY
recipes I've seen elsewhere!
I used both brown rice
flour and the pancake
mix because typically a gluten - free
recipe requires blending different
flours and starches to get loft in the finished product.
I've had excellent results substituting Pamela's Baking
Mix (which is gluten free) for the
flour and baking soda / powder in many
recipes in the Veganomicon and the Vegan Cupcakes book.
You can also make your own gluten - free
flour mix; I've seen
recipes online for that.
If the
recipe requires only an «eggy» dredging as in French Toast, chickpea batter made by
mixing chickpea
flour with water or milk is a delicious alternative.
I only made half the
recipe and used Ginger Ale and egg beaters and bought gluten free
flour mix in our local Sprouts Market.
