With almond
flour and almond butter in so many
recipes these days, I am really enjoying a break
from almond milk, and instead drinking this simply satisfying walnut milk.
I made the mistake of using a
recipe from one of the rainbow pancakes
from another blog and the batter was WAY to thin — so I had to add more
flour to make it work.
As for the dough, it was very very sticky but I didn't add any extra
flour as I was afraid to deviate
from the
recipe.
A couple of things that could contribute to the batter being thicker than expected: - Not letting the flax egg fully set - Not using the exact
flour blend in the
recipe (I have not tested this with other
flours, only the ones in my blend)- Dipping the measuring cup into the
flour vs. spooning it into the measuring cup - The
flour not being at room temperature (if it's
from the fridge or freezer, it will be dryer and will suck up the moisture).

Flour — I didn't have honey, so I subbed in the sugar, and I didn't have any dried nonfat milk, so I just added 3 ounces of 1 % milk to the dough.

from all the other responses that it's not the
recipe that's wrong — just perhaps my measurements - I'm English, living in France and although I have a «cups» measure for the

recipes, I think it all depends on who your audience is — not everyone will shy away
from a long list of ingredients, though some will... and yes — which
flours / dry ingredients you use, depending on the
recipe, can certainly make a huge difference in the result!

I was inspired by Sam's
recipe on Pass the Challah, but I knew I wanted a cookie
recipe that used
flour just because Aldo preferred those (I actually LOVE the more intense peanut butter taste of the 3 - ingredient cookies
from Sam's blog.
In this
recipe, you get your protein
from the powder, eggs and walnuts, as well as a punch of fibre
from the oat
flour.
And I am thankful that you still read my blog even though it is overflowing with bread
recipes and other things made
from ordinary wheat, spelt, and rye
flour.
And for that form, I borrowed
from my
recipe for Pumpkin Pecan Protein Donuts, which uses a combination of oat
flour and vanilla protein powder as the donut base.
I generate tons of almond pulp but have not had a good
recipe for using it up (I've also made a ton of almond
flour from it but don't have good vegan
recipes for using that either, and I avoid gluten too).
For a gluten free version of this
recipe simply substitute the 1 cup of spelt
flour for 1/2 cup chickpea four and 1/2 cup oat
flour (
from GF oats).
What I especially love about it is that you can can use a 1:1 measure with most traditional white
flour recipes, which is a nice change
from the tricky nature of coconut
flour.
I did manage to convert a favorite pumpkin cookie
recipe to a coconut
flour recipe, to create my gluten - free / paleo pumpkin chip cookie
recipe, and it took many, many tries to get it right (not to mention help
from my oldest daughter, who, growing up baking with coconut
flour, is a whiz at this stuff!).
After I had my gluten - free
flour ready, I chose a muffin
recipe from vegalicious as a base and adapted it a bit.
I've made the one
from Nicole's first book; another one without rice
flour and have 2 other
recipes waiting in the wings.
