Modified cornstarch — also sometimes called resistant cornstarch — is a commercial
flour replacement used to reduce the carbohydrates and calories and increase the fiber in products.
As
a flour replacement I used polenta (cornmeal) and I also used gluten free baking powder.

As for the gluten - free
replacement, the easiest I've found is just to
use the gluten - free baking
flour blends that are a one - to - one
replacement for regular
flour.

used to have to order it online, this past weekend I spotted it at the Chattanooga Whole Foods!
I also plan on whizzing it in the food processor and
using it as part of

Our go - to
replacement is to
use half all - purpose

flour (because the gluten content is essentially the same in this mix as in whole wheat pastry
